RD FRESH DRY AGING BAGS are amazing. I had four steaks ready to grill on Friday, only to find out I was out of propane. I placed the unwrapped steaks back in the fridge and didn’t get a chance to grill them until Sunday. They looked as good as they did Friday, and unbelievably, not the slightest bit of odor in the fridge.
Took off after 6 days…. Pretty cool, I was hoping for it to darken up a bit more, but honestly all the matters in my opinion is the taste. I have a steak cut the exact same time from the same batch that I did not dry age, so I can do a direct comparison. It’s just sitting wrapped up in the butcher paper. There is definitely more flavor in the aged one. And I would agree “nuttier”. I think next time I will try 10 days…
***Note the browning “slime” of the steak that was not dry aged with RD FRESH… and yes, the RD FRESH steak is smaller… but it is that weight loss which gives it the added flavor and tenderness… the reason for dry aging steaks in the first place…
Cracked paper, see salt, creamy butter, Sous Vide set to 129°. About 4 hours. Tonight’s dinner! Very good. Thanks. Perfect medium rare with great texture and taste.
